The hustle and bustle of Burgos’ squares and markets reflect the hive of activity that has characterised this city throughout the centuries yet which has skilfully adapted to the demands of modern-day living. These historic sites have long witnessed the exchange of produce and the sale and purchase of food, and have also naturally been the setting for major events that are still commemorated today.

The route starts in the Plaza de Santa María, at the foot of Burgos Cathedral, which has steadfastly watched over the comings and goings of Burgos’ residents and traders.
