This gastronomic project was born in May 2007 by Víctor Martín, owner and chef of TRIGO, and his wife, Noemí Martínez, responsible for the management of the establishment and the room service and sommelier.

Víctor Martín is passionate about the traditional recipes of his land (Leon). Trained in the Hospitality Schools of Madrid and Santiago de Compostela, in his career it is worth highlighting his work alongside one of the greats of Spanish gastronomy, Santi Santamaría, with whom he shared a kitchen at the Racó de Can Fabes restaurants, Barcelona (3* Michelin), and Sant Celoni, in Madrid (2* Michelin). At Trigo they make seasonal and market cuisine but with a creative tendency, where meat, fish and garden products are the protagonists.
