Su nombre inicial fue Villa Citti, aunque luego se sustituyó por el actual Santervás, que es una alteración de San Herbás (Gervasio), primer abad del monasterio de Sahagún, ya muy cercano al municipio. Fue precisamente en Santervás de Campos donde nació Juan Ponce de León, descubridor de La Florida y fundador de San Juan de Puerto Rico.
Además, en esta localidad se encuentra la Iglesia de los mártires San Gervasio y San Protasio.
