We like to talk about the sea of Castilla, because that is our reference. We work the sea because we understand the local not only because of what we have closest to us but because of what we are capable of bringing to the table. Our philosophy speaks of recipes of fish brought from our coasts and meats and ingredients from the garden that we find near or far away. Aquende and Allende are the names of our tasting menus and speak of that double feeling for what is here and what is there. Since we also like to play with techniques from other countries. We hope not to leave you indifferent with our proposal.
