"La Lagar" from Latedo, is one of the few mills left in Aliste, where for many years the oil has been produced in an artisanal and manual way, powered by animal and human power, without the presence of electric or thermal machines.

Every year, in December, the winery opens for a few days where, free of charge, visitors share with the neighbors the process of making olive oil. After work, the collection of the oil begins and the tasting of the traditional alistano traditional artisan bread toasts with olive oil and honey. Throughout the day the winery remains open, from 10 in the morning, so that all those who wish to can see and learn about the process of making the oil, an activity that in the Aliste region is only typical of late. And all enlivened with folklore music from Alistano.
