Igor Zalakain
Igor Zalakain is a chef who is part of the creative team at the renowned Arzak Restaurant in San Sebastián.
Along with Elena Arzak and Xavier Gutiérrez, Zalakain is one of the key figures in the conception and development of the dishes offered on the menu at Juan Mari Arzak's restaurant. His main role is focused on the Arzak Restaurant Laboratory, which he has led for over a decade alongside Xabier Gutiérrez. In this laboratory, his work focuses on creation, experimentation, and culinary innovation.
In addition to his work at the restaurant, Igor Zalakain has participated in events promoting traditional Basque markets. For example, in 2015, he cooked at San Sebastián's Plaza de la Bretxa with Elena Arzak as part of the "Creando Cocina" program, creating dishes such as mango and beer pintxos, txistorra with apple, and "bonito en bonfire de escamas" (flake-cooked tuna on a bonfire), all with the aim of promoting the Basque Country's native products.
