Mar Marcos
Head chef and owner of Restaurante España, in Fermoselle (Zamora), a third-generation family establishment located in the heart of the Arribes del Duero.
Self-taught, she learned the secrets of the kitchen from a young age with her grandmother and mother (both cooks), later complementing her knowledge at the International Cooking School of Valladolid. Her career combines the culinary traditions of Zamora, and especially La Raya, with a contemporary approach, reinterpreting traditional recipes—dishes such as cod a la tranca, suckling lamb in almond sauce, and potatoes with mushrooms—with creativity, balance, and respect for local produce.
A staunch defender of the territory, Mar works with native ingredients from the Sayago Fermoselle region, such as Sayago beef, artisan cheeses, and locally sourced vegetables and legumes, promoting a cuisine with identity and roots.
