Akrame Benallal
Professional Jury - France
Akrame began his career at the age of 25, working for several years with Michelin-starred chefs until he developed his own unique style of cooking. In April 2011, he opened his first restaurant, which bears his name, and quickly earned his first Michelin star, thanks to his reinterpretation of codes and the selection of products he uses to achieve total harmony on the plate. His constant desire to evolve led him to open Atelier Vivanda, a steakhouse bistro, in 2012, which he later established in Hong Kong, the Philippines, and Azerbaijan. He later ventured into BRVT, a winery dedicated to wine and cheese, and Madl'eine, an innovative and ambitious project in which the chef shares the flavors of his childhood. In 2017, he opened A'Plum, a café with exquisite desserts and fresh seasonal produce, and the Shirvan Café Métisse restaurant, which serves typical specialties ranging from Morocco to Greece.
