A graduate of the Castilla y León School of Hospitality in Soria, Elena trained at the Santo Mauro Hotel in Madrid before opening her own restaurant, Lobita, in 2001, where she holds a Michelin star and a Repsol Sun. Since then, she has been a finalist in various competitions (Castilla y León Bocusse d'Or; National Cuisine with a Mudéjar Touch; winner of the National Truffle Competition in 2011, etc.), in addition to having participated in the most important gastronomic congresses. Her cuisine, a faithful expression of her surroundings in a contemporary style, has made her a leading figure in Castilian cuisine.
