Martin studied at the Institute of Tourism Studies in Malta, his home country, during which he completed an internship at the Gleneagles Hotel in Scotland, returning to it after graduating. At Gleneagles, he completed his training at the two-Michelin-starred Andrew Fairlie restaurant. He also competed successfully in several national culinary events before moving to London to work at the one-Michelin-starred Apsley restaurant in the Lanesborough Hotel, led by Chef Heinz Beck. During his time in London, he has worked at the Royal Automobile Club, Restaurant Luca, and now at Restaurant Hide, where he earned his first Michelin star within five months of opening with Chef Ollie Dabbous. He has participated in prestigious competitions such as The Craft Guild of Chefs or the National Chef of the Year, finishing third in the final in 2015, winning Britain's CSMA Award for Culinary Excellence and achieving the Royal Academy of Culinary Arts Award of Excellence in 2014, and the British Culinary Federation Chef of the Year which he won in 2016. During his time at Hide restaurant, Martin has won the UK's most prestigious cooking competition, the Roux Scholarship, becoming the 35th winner of this competition.
