Martin Potts was born and trained as a chef in Australia before moving to London to work at prestigious hotels such as The Dorchester, Claridges, and The Landmark. After four years in London, he returned to Australia to take up a position as Group Executive Chef with ClubCorp, specializing in premium five-star golf resorts in Asia. After moving to Dublin, Ireland, Martin opened several cooking schools to train young Irish chefs in professional cuisine. Martin's students have worked in two- and three-star Michelin restaurants around the world, and he continues to train future chefs at the Bray Institute of Higher Education part-time while consulting in the kitchens of several restaurants in Ireland. In 2011, he and one of his students surprised the judges and won first prize at the International Tapas Competition for Cookery Schools held in Valladolid, Spain, with his traditional full Irish breakfast.
