Galician Lucia Freitas is one of the most influential chefs in our country. She trained in gastronomy in the Basque Country and later worked with the Roca brothers, Pepe Rodríguez, and Andoni Aduriz, among others. She is part of the Nove group and owns the restaurant A Tafona (one Michelin star and two Repsol Suns) and the Lume Gastronomic Bar. She is Honorary President of WIG (Women in Gastronomy, Japan). Lucía firmly believes that haute cuisine is heading down a path of regression, a return to its origins through technology and innovation. She grows her own garden and constantly researches the world of greenery and plant colors. She works closely with shellfish gatherers, fisherwomen, and local producers to develop her menus and new recipes that enrich Galicia's culinary culture.
