Andrés Davila, of Ecuadorian origin, began his hospitality studies at the University of Quito, graduating first as a sommelier and then as a Technician in Gastronomy and Hotel Management in Buenos Aires. He began his professional career specializing in opening restaurants in large hotels. At just 25 years old, he was entrusted with the opening of the Grand Victoria Boutique Hotel in Loja. From 2009 to 2011, he decided to pivot his career, becoming a professor and coach for the University of the Hemispheres team, with which he won several international awards. After this teaching stint, he went on to manage Casa Gangotena in Quito, a restaurant with which he was included on the Condé Nast Hot List in 2012 and named Best Hotel Restaurant in Central and South America in 2016. During these five years, he continued to achieve success: "Innovative Cuisine" at Mesabe in 2016; Golden Roses in the Ecuadorian Cuisine category in 2014 and 2015, and Golden Roses in the Sweet Cuisine category in 2015. In 2013, the Culinary Academy of Ecuador named him Ambassador of Ecuadorian Cuisine, representing the country in Canada (SIAL CANADA, Montreal 2014, #Ecuadoreats 2015 in Toronto). He was also a speaker at the Latitud Cero Gastronomic Congress in 2015. He has been managing the kitchens of the Marriott Beach Resort in Grand Cayman for the past year.
