Polyanne Ribeiro de Souza Alves was born in Goiânia, in central Brazil, and spent her adolescence in the state of São Paulo.
He studied gastronomy at the SENAC Águas de São Pedro, in the interior of São Paulo.
His first experience in haute cuisine was at The Yeatman Hotel in Porto. He later joined Gruta as sous chef, which was awarded the Bib Gourmand by the Michelin Guide that same year.
At 23, he moved to Lisbon, where he took on the position of sous chef at the restaurant Eleven by Joachim Koerper, where he continues to work today.
Passionate about Brazilian products and their reinterpretation, her cuisine is based on the roots and flavors of her childhood, combined with classic techniques.
