Villaciervos, a small municipality in Soria , was a pioneer in this field by establishing the largest farm in the world dedicated to black truffle cultivation more than 50 years ago, with more than 100,000 mycorrhized holm oaks. This visionary project laid the foundation for the development of a key sector that not only boosts the rural economy but also positions Soria as a global leader in truffle farming.
In addition to Soria, other provinces such as Burgos, Valladolid, Segovia , and Palencia contribute to black truffle production, thanks to their clayey-calcareous soils, optimal altitudes, and ideal climates. These conditions guarantee a truffle of exceptional quality, with an intense aroma and flavor that make it an essential ingredient for the best chefs.
The Junta de Castilla y León has worked intensively in recent years to make mushroom products an emblem of the Autonomous Community. Through events such as the International Congress on Mycological Cuisine and Tourism, Soria Gastronómica , the popular Jornadas Buscasetas (Setas Busy Days), and the prestigious International Cooking with Truffle Competition, the truffle has established itself as a symbol of gastronomic excellence.
The Cooking with Truffle competition, which will celebrate its fifth edition dedicated to the Iberian Peninsula in 2025, has evolved from a biennial to an annual format, alternating between Iberian and international competitions. This event has become a must-attend for chefs and food lovers, and this time it will bring together renowned chefs from Spain and Portugal. The winners will represent their respective countries in the next international edition, scheduled for 2026.
As in the previous edition, participants will have the support of eight local restaurants whose chefs will act as sponsors. Furthermore, the contest dishes will be included on the menus of these establishments, allowing the public to enjoy the innovative creations.
For the second consecutive year, the event will include a popular or foodie jury, which will award a fourth prize. The professional jury, composed of leading gastronomy experts, specialized journalists, and prestigious chefs, will maintain the high level of excellence that characterizes the competition.
The competition will take place from February 6 to 9, 2025 , with Saturday the 8th being the key day for the competition, as the competition will take place at the emblematic Palacio de la Audiencia Cultural Center , located in the Plaza Mayor of Soria.
