Castilla y León, with the province of Soria as its main center, occupies a privileged position in the production of the prized black truffle ( Tuber melanosporum ) , one of the most highly valued products in haute cuisine. Present in the region's ecosystem since time immemorial, the truffle has experienced remarkable growth in recent decades thanks to truffle cultivation, transforming the agricultural landscape into a forested one and generating a significant economic and social impact in rural areas.

The municipality of Villaciervos in Soria was a pioneer in this field, hosting what was then the world's largest truffle farm, with mycorrhizal holm oaks , more than 50 years ago. This visionary project laid the foundations for a strategic sector that today positions Soria as a global leader.
