Castilla y León, with the province of Soria as its main center, occupies a privileged position in the production of the prized black truffle ( Tuber melanosporum ) , one of the most highly valued products in haute cuisine. Present in the region's ecosystem since time immemorial, the truffle has experienced remarkable growth in recent decades thanks to truffle cultivation, transforming the agricultural landscape into a forested one and generating a significant economic and social impact in rural areas.
Along with Soria, provinces such as Burgos, Valladolid, Segovia or Palencia contribute significantly to this production, thanks to the combination of suitable soils and climatic conditions, which allow for obtaining a truffle with an intense aroma and exceptional flavor, highly appreciated.
The Junta de Castilla y León has decisively promoted the value of mycological products as a hallmark of the region. Initiatives such as the Soria Gastronómica International Congress of Mycological Cuisine and Tourism , the Buscasetas Days , and the International Cooking with Truffle Competition have solidified the truffle and mycology as a symbol of gastronomic excellence.
The Cooking with Truffles competition, which will celebrate its sixth edition in 2026 , has evolved into an annual format, alternating between Iberian and international events. This international edition, taking place on February 7, 2026 , will feature renowned chefs. Participants will be supported by eight local restaurants , whose chefs will act as mentors, and whose establishments will incorporate the competition dishes into their menus.
The competition will once again feature a top-level professional jury and, for the third consecutive year, a popular or foodie jury , which will award a fourth prize. The event will take place from February 4th to 8th, 2026 , with the Palacio de la Audiencia in Soria , located in the heart of the Plaza Mayor, serving as the main venue.
