Chef Julian Otero
Julián holds a degree in Gastronomy and Culinary Arts and works in the R&D department at Mugaritz. He has developed his career combining his work as a chef with research, particularly in sociocultural and historical fields. He collaborates with institutions such as the Bulli Foundation, the Basque Culinary Centre, and the University of the Basque Country to explore gastronomy as a cross-disciplinary discipline. He is also an associate editor of the International Journal of Gastronomy and Food Science.
