Chef Mª José MedaChef Mª José Meda Owner, along with her husband, Sebastián Roselló, of the restaurant El Batán. Awarded a Michelin star for her evocative miniature local dishes, she offers a highly personal cuisine in the town of Tramacastilla, Teruel.

From a culinary perspective, they were clear that they needed to offer something different on the restaurant menu, but always using local products. The key was transforming these products into dishes that were different from what one might expect at other restaurants in the area.

She studied social work and continued her training through workshops and courses, until she earned a diploma in Hospitality Management in 2009.

El Batán is a very eco-friendly establishment: they heat the water with solar panels, they've used local materials to restore the building, they grow all their herbs there... They're very conscious of where they are and don't want the environment to change.
