Chef Paul Froggatt
British-born chef Paul Froggatt initially trained in the UK and France, where career highlights included working at Gidleigh Park Hotel (two Michelin stars), Bernard Loiseau in Bourgogne (three Michelin stars) and Château de Courcelles (one Michelin star).
Paul continued his career at two of Singapore's most popular European restaurants: San Marco and Saint Pierre. He later served as head chef at Amber Restaurant at the Landmark Mandarin Oriental Hotel (two Michelin stars) in Hong Kong.
During his time at Amber, the restaurant was voted one of the top 10 restaurants in the annual San Pellegrino 50 Best Restaurants awards.
For seven years he has been head chef at Huka Lodge, one of New Zealand's most exclusive hotels.
