Jaime Olaizola
Jaime Olaizola Suárez is a forestry engineer and PhD in applied mycology. Since completing his doctoral thesis, he has combined his entrepreneurial work with applied research in mycology, authoring more than 10 scientific articles in international journals and more than 10 books and chapters on wild mushrooms. He collaborates with several research groups at the University of Valladolid, CSIC, INIA (National Institute of Statistics and Census), and University College Dublin, where he became an associate professor in 2018. He is a founding partner of several companies specializing in the application of fungal properties in different sectors, such as the IDForest laboratory, Naturae, Trufbox.com, and Rooteco Agriculture. His passion for gastronomy and mushrooms has led him to try more than 100 species of wild mushrooms in search of new flavors and textures.
