PhD in Food Science and Technology from the Complutense University of Madrid. She began her research career in the Biochemistry and Safety of Plant Foods (BIOSEGVEG) group of the Department of Food Technology (INIA CSIC), working on the nutritional and functional characterization of legumes, as well as the effect of processing. Her thesis focused on the identification and characterization of allergens in lupin (Lupinus albus) and the study of treatments to reduce or eliminate its allergenicity. To this end, she completed several stays at the Institute of Food Research (Norwich, UK).

Between 2008 and 2020, she was involved in various research projects developed at the Center for Food Quality located in Soria (INIA CSIC).
