Guillermo Ortega's career has always been linked to the culinary arts in its most dynamic form. Since training in Kitchen Management, he has held various roles in the kitchen and undertaken culinary research trips to several countries, conducting gastronomic studies that demonstrate his restless and innovative spirit. Behind him are experiences in restaurants such as the legendary Santceloni**, international adventures, and his project Cantina Roo, serving Nikei and Mexican cuisine, where he developed pre-Columbian and more contemporary techniques and preparations.
Creativity, learning, design, and leadership are some of the words that define the man who now heads the team that has its nerve center in Ambivium's Harmony Lab. Guillermo, in addition to developing the seed of the Cellarium menu, deploys the restaurant's R&D, investigating new culinary techniques related to conservation with the aim of opening unexplored windows.
