Pascal BardetPascal Bardet Since 2013, the chef-owner of Le Gindreau Saint Médard, which was awarded one star in the Michelin Guide in March 2014, has worked in several prestigious establishments. From September 2011 to June 2013, he was executive chef of the 5-star Hotel Belles Rives in Antibes/Juan les Pins, where he was in charge of all catering, including the gastronomic restaurant La Passagère, the private beach, banqueting, room service, and breakfast. Prior to that, he worked as chef de cuisine at the Louis XV-Alain Ducasse restaurant in Monaco from 2007 to 2011, which received three stars in the Michelin Guide. He was also chef de cuisine at Bar & Boeuf in Monaco in April-September 2007 and April-September 2006, designed by Alain Ducasse and awarded one star in the Michelin Guide. He was also executive chef of the Hotel des Ambassadeurs in Menton from April to September 2005, where he opened the hotel and established all the catering services. He was also executive chef of the Hotel du Parc, 59 av Raymond Poincaré, Paris 16ème, from September 2003 to April 2005, where he was in charge of the restaurants Le 59 and La Terrasse, the banquet service, room service, and petit déjeuner. In July 1995, he won third prize in the National Competition for the Best Apprentice Bac Pro.
