He belongs to a family of pastry makers that dates back to 1758. Raúl Asencio has been chosen as the best ice cream maker in Spain in 2023.
In his workshop in Aspe, Alicante, he creates nine varieties of panettone using only locally sourced ingredients of the highest quality, combining respect for tradition with a desire for innovation. His panettone has been recognized for four consecutive years with the silver and bronze medals for Best Panettone of the World in Rome (2019, 2020, and 2021) in the Classic Panettone and Innovative Panettone categories. His bakeries are located in Aspe and Novelda.
Among their specialties are their sweet potato and pumpkin toña and their artisanal ice cream, whose catalogue combines classics like mantecado and turrón with other truly unique and original ice creams, such as bread, oil, and chocolate ice cream, Milanese panettone ice cream, or vegan rice milk meringue ice cream. Furthermore, their Aspe pastry shop has been recognized with a Solete award in the Repsol Guide.
