Originally from Maella (Zaragoza), he studied catering and gastronomy at the Cambrils School of Hospitality and Tourism (Tarragona).
His training continued in restaurants such as La Terraza del Casino (Paco Roncero), Les Présd'Eugénie (Michel Gérard), and Akelarre (Pedro Subijana). However, since 2018, he has worked in the kitchens of this Relais & Chateaux located in the Matarraña region (Teruel), where he creates plant-based, seasonal cuisine based on organic produce from the estate itself. Mycology has been a serious and intense passion throughout his life. That's why mushrooms and truffles from Matarraña and Teruel will be present in his dishes for almost the entire season.
