Mugaritz Restaurant
Mugaritz has been located since its inception on the dividing line between two Basque towns, Errentería and Astigarraga, in a rural area surrounded by mountains. Its name pays homage to the border (muga, in Basque) and to the oak tree (haritza) that has guarded that boundary for 200 years. The border is the geographical space where this project was physically located by chance in 1998, but over the years, that boundary has defined Mugaritz, placing it between the seams of gastronomy and art, or between the culinary and scientific worlds. In addition to projects with neuroscientists and engineers and initiatives with historians, sociologists, actors, and musicians, there is a daily routine punctuated by training on creativity at universities, consulting for companies, and research with the food industry to create new products. Mugaritz is a creative ecosystem where eternally curious minds gather, reflecting and creating alongside professionals from the worlds of science, art, philosophy, and nutrition. Today, Mugaritz has two Michelin stars and is ranked number 7 on The World's 50 Best Restaurants list.
