IV Cooking with Truffles - February 8-11, 2024 - Soria
The Autonomous Community of Castilla y León , especially the province of Soria , is known for its extensive mountains, where wild truffles have always been present. However, it currently stands out in this regard, above all, for its black truffle plantations in full production. Precisely, one of its municipalities, Villaciervos, was a pioneer in these plantations and is home to the largest truffle cultivation farm in the world, with more than 600 hectares of holm oaks . Overall, Soria, but also other provinces of Castilla y León such as Burgos, Valladolid, Segovia or Palencia, contribute significantly to the national production of this prized fungus. The characteristics of the soils and the altitude favor production, in addition to ideal ripening, which highlights its visual and organoleptic qualities.
